Asparagus with pepper jack cheese sauce
This is one of those quick and easy recipes you can throw together in just a few minutes. In fact, you can cook the entire dish in the microwave! I almost classified this one in the low carb recipes section because it is very low carb. I served this with my Chili Lime Skillet Steak.
Holle’s Asparagus with Pepper Jack Cheese Sauce recipe
What you’ll need:
- Frozen steam-pack of asparagus, or one bunch of fresh asparagus
- 1 tablespoon butter
- 2 ounces pepper jack cheese
- 1 tablespoon mayonnaise
- Pinch of chili powder
Directions: Cook asparagus until tender but still firm.
Shred or cut cheese into small cubes. Add butter. Microwave until cheese melts.
Add mayonnaise immediately and stir well.
Pour over asparagus. Sprinkle on chili powder.
