Banana Pancakes

These banana pancakes are awesome – one of our favorite breakfast recipes! The grandkids just can’t get enough of them. This is a great way to use overripe bananas. In fact, as long as the banana flesh is still good, it won’t matter if the peels are almost completely black. The kids like their banana pancakes served with fresh strawberries and strawberry syrup.

Ingredients:

  • 3 overripe bananas
  • 1 cup self-rising flour
  • ¼ cup sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon vanilla
  • Pinch salt
  • 1 cup milk
  • 2 eggs
  • 2 tablespoons oil

Directions: Mash bananas in a large mixing bowl, using a fork. Add flour, sugar, cinnamon, vanilla, and salt. Give the mixture a quick stir.

Whisk together milk, eggs, and oil. Add to banana mixture and stir just until ingredients are moistened.

Lightly grease a nonstick skillet, or spray the pan with cooking spray. Drop batter into skillet and cook over medium heat until both sides are golden brown.
