This is a great Cajun recipe for a creamy salad. It goes well with cookouts, picnics, bbq cooking, and just about everything else. It’s very similar to potato salad, but in some ways, this is better. Why? Because you’ll have a lot more surface area with rice than you’ll have with cubed potatoes, and that means more flavor! Use my Cajun seasoning recipe for this. The recipe calls for 2 teaspoons, but I usually add more.
Holle’s Cajun Rice Salad recipe
What you’ll need:
- 3 cups cooked rice, cooled
- ½ cup mayonnaise
- ½ cup chopped green bell pepper
- ½ cup chopped onion
- ¼ cup chopped celery
- 3 tablespoons sweet pickle relish
- 2 tablespoons sugar
- 1 tablespoon prepared mustard
- 1 tablespoon vinegar
- 2 teaspoons Holle’s Cajun seasoning
Directions: Blend all ingredients together. Add more mayo, if needed. Taste and adjust Cajun seasoning. Cover and refrigerate for at least an hour before serving.
