Thanksgiving recipes

This is a wonderful spread that you might want to add to your list of Thanksgiving appetizers. I usually make mine to resemble an ear of Indian corn, but you don’t have to go to this trouble if you don’t want to. Personally, I think it’s fun to create food art! Use this as a party food for any occasion!

Thanksgiving appetizers

These cheese pinecones make attractive Thanksgiving appetizers. A cheese pinecone or two would also be appropriate as a party food for a Christmas get-together. They’re simple to make, although they are somewhat time consuming. I always like to insert some fake greenery in the “stem end” to make the pinecones more realistic.

soul food recipe

These fried chicken strips are sort of a new version of soul food, with no skin and no bones to have to deal with. The breaded strips are great for snacks, as an entrée, or as a party food, if you cut them into smaller pieces. The chicken strips are also great for sandwiches. Just add lettuce, tomato, and your favorite condiment and serve them on a toasted burger bun.

baked figs with cheese and honey

There was a time not so long ago when figs were a popular southern food. Homes all across the South had a fig tree growing in the yard, and when the figs were ripe, housewives stayed busy making fig preserves and fig cakes. I’ve always had a fig tree or two everywhere I’ve lived except here in my present home. Quite honestly, I’d sort of forgotten all about figs until a friend, Kathy Alexander, asked me about a baked fig and cheese dish. I used to make such a dish, but it had been years since I had done so. I set out to make it again. The problem was finding some fresh figs. None of the supermarkets in this area had figs. I could hardly believe it! After a long search, I finally discovered that my niece, Becky Wilson, had a fig tree, so she generously shared her bounty with me.

baked ribs

I made some baked ribs the other day that were pretty awesome. I used spare ribs, but baby back ribs would work for this delicious recipe, too. In fact, the ribs were so good that I didn’t even use a barbecue sauce, which is unusual for me. The baked ribs were super tender, and I finished them at a higher temperature to get them nice and brown.

Hubby's about to eat this one!

Stone crab claws are awesome, and you don’t need any complicated crab recipes to enjoy them because they have so much flavor all by themselves. The meat tastes like a combination of crab and lobster. Only the claws of stone crabs are harvested, as the body of the crab provides very little meat. When you purchase stone crab claws, chances are that they’ve already been cooked, so all you have to do is to heat them or eat them chilled. They make a great party food, and they can be eaten as a meal or added to cold salads.

Watermelon boat photo by Emily Barney

I’ve made several watermelon boats for fruit salads, especially for parties and cookouts. If you’re having an outdoor event for Memorial Day, July 4, or Labor Day, make one of these! You can do it – it’s really easier than it looks, and it makes a festive container for fruit salads.

Homemade vegetable dip

Lots of farm-fresh vegetables are available for summer get-togethers like Memorial Day, July 4, and Labor Day. Serve these chilled as an appetizer or as a side dish. For a colorful dip holder, hollow out red bell peppers! Some good dippers include:

This simple punch is perfect for patriotic occasions like Memorial Day, July 4, and Labor Day. Since it’s red, white, and blue, it will be in keeping with your party theme. Make the punch from a blue beverage. I like to use Hawaiian Punch – Polar Blast or Berry Blue Typhoon. To one gallon of punch, add 2 cups of ginger ale. This makes the basic punch, so you have the “blue” part. For the “red” part, fill plastic ice cube trays with any flavor of red punch and freeze. For the “white,” thinly slice star fruit crosswise to create small stars. Place each star in the bottom of a cheap paper cup and fill with about 2/3-inch of ginger ale and freeze.
