Everyone knows that hot buttered grits and southern food are old pals. But what do you do with leftover grits? You fry ‘em for a tasty soul food recipe or Lowcountry recipes! Pack the leftover grits, while they’re still warm, into a clear drinking glass with straight sides. Press the grits down with a spoon to ensure there are no air pockets. Refrigerate the grits for several hours of overnight.

Homemade waffles make getting out of bed early worth the effort! I like all kinds of waffles, and this an easy buttermilk waffle recipe. For the best results, use whole buttermilk. If you use non-fat buttermilk, your waffles will be good, but they won’t be as rich as waffles made with regular buttermilk. Also, you can use melted butter or margarine in place of the shortening, if you wish.

There are many different versions of this casserole. Oftentimes, it’s referred to as “Christmas morning breakfast casserole.” The reasoning behind this is that the casserole is put together the night before it’s cooked and served, so it can be baking while the family is busy with their holiday traditions. I must admit, I’ve served this dish on several Christmas mornings, so I suppose the moniker is appropriate.

These are the best pancakes you’ll ever eat…EVER! They’re light, fluffy, and melt in your mouth. I can’t take credit for this pancake recipe. I have more than one pancake recipe from scratch up my sleeve, but this isn’t one of my creations. I got this pancake recipe from a friend, and it’s almost 100 years old. Actually, the original recipe called these “griddle cakes,” but I wasn’t sure anyone outside the Deep South would know that term now, so I’m just calling them pancakes.

Sausage gravy recipe

Ingredients

1 lb link sausages

2 tablespoons butter

¾ pint milk

¼ pint heavy cream

½ teaspoon black pepper

dash cayenne pepper

2 tablespoons flour

I find combining milk and heavy cream gives a rich taste, but if you only have milk, that works well also. Adjust the amount of pepper to suit your tastes. This will serve two.

This is one of my favorite biscuit recipes. Be sure not to knead the dough too much - less is better in this case. It may be a little lumpy, but that is all to the good. Hmm hmm - serve this with sausage gravy and fried eggs for an early but happy heart attack.
