I like traditional three-bean salad, and I also like southwestern recipes. I decided to create a cold salad from these two ideas. This bean salad is sweet and tangy, with a little heat. We enjoy it with grilled chicken and baked ham, but it would be a nice accompaniment to most meats, poultry, and even fish. If you like low carb recipes, you can use Splenda instead of sugar. Yes, beans have carbs, but they also provide protein and fiber.
Fajitas are some of our favorite southwestern recipes. You can make a tasty fajita out of just about any type of meat, poultry or seafood, so they’re very versatile. Fajitas are also a great way to use leftovers, which is the way I created my smoked pork fajita recipe. We had slow-smoked a pork loin, and it was big. I shredded some of the leftover meat to make pulled pork, and I cut the remaining pork into strips and placed it in the freezer for future fajitas.

Avocados are great in low carb recipes. A one-ounce serving of avocado has three grams of carbs, but two of those grams are fiber, leaving just one net carb gram per serving of avocado. In addition to dietary fiber, avocados also contain healthy fats and small amounts of lots of different vitamins and minerals.

About once a week, we have dinner at our favorite Mexican restaurant with our friends Steve and Sandy. Sandy and I are both usually on low carb diets, and we’re always on the lookout for tasty new low carb recipes. At the restaurant, we usually try to order low carb items, and one of our favorites is hongos con queso, or mushrooms with cheese. I figured this item would be pretty simple to make at home, so I gave it a shot. After a couple of tweaks, I wound up with the following low carb recipe that tastes almost exactly like the dish served at the restaurant.

I have another recipe for homemade hamburgers to share with you that we made a few days ago – kind of a Southwestern or Tex-Mex recipe. We cooked our homemade hamburgers on the grill, but you can fry yours in a black iron skillet if you like. I used lean ground beef but decided the burgers might get a little dry, so I added some cream to help with the juicy factor.

With these homemade hamburgers, you won’t be asking, “Where’s the beef?” A half pound of beef will be right there on your bun – in two forms. You’ll have a nice quarter-pound grilled burger patty, and on top of that, you’ll get ¼ pound of fajita steak, with all the trimmings. It’s beef and more beef!

Do you like Tex-Mex recipes? The old man and I like just about any Tex Mex food. This is a pretty easy recipe that hubby and I especially like. As a matter of fact, it’s cooking right now as I type! The chicken turns out tender, juicy, and flavorful because it “steams” in lime juice first.

If you like quick and easy recipes, you’ll love this dish! This recipe is from my youngest daughter, Melissa. She and her family enjoy Southwestern recipes and Mexican food, so she prepares it several times a month. This chicken quesadilla recipe is a super quick and easy recipe that you can make in a snap because the chicken is already cooked. It needs a quick trip to the skillet to get warm and melt the cheese.

Hubby and I first had this Southwestern dish when we were vacationing at the beach several years ago. We both really liked it, so I came home and began experimenting. I knew there was more to this Southwestern recipe than just the obvious black beans and corn.
