BBQ Chicken Recipe
4 whole chickens (2 ½ to 3 # are best)
- 1 # CHEAP Oleo Margarine
- 1 small jar French’s mustard
- 1 small bottle French’s Worcestershire sauce
- ¾ bottle of Minute Maid Frozen Lemon Juice
- Lawry’s Seasoning Salt
Total Cook Time – 2 hours
Sauce preparation: Melt butter in sauce pan, stir in mustard, Worcestershire sauce and 2 tablespoons of seasoning salt. Heat mixture stirring constantly but do not let it begin to boil. Set sauce pan off heat and allow mixture to cool while chickens are washed and salted. Add lemon juice to mixture and stir thoroughly. Some sauce can be put aside for dipping.
Wash / clean birds and split so they will lay flat on the grill. Be sure to dislocate the joint of the thighs to assure thorough cooking. Salt both sides of the chicken before taking to the grill. For gas grilles use low heat. Place the chickens rib side down. Allow to cook for 30 minutes and turn chickens before applying sauce the first time. Continue cooking, liberally applying sauce, and turning every 30 minutes for a total cook time of 2 hours. Remove from grill and serve.
