I make buckeye candy – also called buckeyes, buckeyes candy, buckeye balls, buckeye candies, or candy buckeyes – every year for Christmas. I serve them at our annual Christmas party, and I add them to goody baskets for friends and neighbors. This is a super easy homemade candy recipe. There’s no thermometer involved. Heck, you don’t even have to use the stove! If you use the microwave dipping chocolate, all the cooking can be done in the microwave.
These homemade candies are called buckeyes because they closely resemble buckeye nuts. See my photo? You’ll notice that the very top portion of the peanut butter balls aren’t dipped in the chocolate.
Buckeyes taste very similar to a Reese’s peanut butter cup – only better!
Holle’s Buckeyes recipe
What you’ll need:
- 1 stick butter, softened
- 1 box confectioner’s sugar
- 1 ½ cups peanut butter
- 1 teaspoon vanilla
- Microwaveable dipping chocolate
Directions: Mix together the butter, sugar, peanut butter, and vanilla. Place in fridge until firm.
Form mixture into balls, 1 or 1 ½- inches each. Place the formed balls on a plate or tray and leave in the freezer for a few minutes to get very firm.
Melt chocolate in a glass bowl. Insert a wooden skewer into each peanut butter ball and dip in chocolate. Place on waxed paper for chocolate to solidify. The dipping process works best if you do it in small batches.
