Easy Meatloaf Recipe

This all American recipe for meatloaf is sure to please. Using the ingredients listed below, and specific amounts, you will be able to serve up to 8 people in your family, with a little left over for seconds if anyone is still hungry.

Ingredients

  • 1 1/2 lb Ground Chuck
  • 1/1/2 lb Ground Pork
  • 4 Bacon Slices, Finely Chopped
  • 2 Eggs, Whole
  • 1/2 Cup Half / Half Milk
  • 1 Cup Fresh Bread Crumbs
  • 2 Tsp Cider Vinegar
  • 2 Tbsp Brown Sugar
  • 1 1/4 Cup Finely Diced Onion
  • 1/2 Cup Grated Carrots
  • 1/2 Cup Finely Diced Celery
  • 1 1/4 Cup Finely Chopped Portobello Mushrooms
  • 2 Tbsp Unsalted Butter
  • 1 Tsp Finely Chopped Garlic
  • 1/2 Tsp Dried Thyme
  • 1 3/4 Tsp Kosher Salt
  • 1/2 Tsp Ground Black Pepper
  • 1/2 Cup Ketchup

Step 1: Preheat your oven to 350 degrees. Melt your butter in a large skillet, and once foaming, add in your mushrooms, celery and onions. Add in your kosher salt and black pepper and cook for 2-3 minutes, making sure that you do not brown the vegetables.

Step 2: Now you need to sprinkle the dried thyme over the onions, celery and mushrooms. Add your garlic and salt, cooking and stirring until the onions are tender and see-through. Next mix in the carrots and remove the pan from the heat. Allow it to cool completely while soaking your bread crumbs in a mixture of half / half milk and beaten eggs.

Step 3: In a large mixing bowl, add your ground meats, cooled vegetables, bacon, and bread crumbs. Add in your remaining salt and pepper. With your hands, stir the mixture until it is blended together well.

Step 4: Take the mixture from the bowl and pour it into a rectangular baking dish. Shape the mixture into a 9″ x 5″ sized loaf and make shallow indentations around the sides.

Step 5: Mixing together your ketchup, brown sugar, and vinegar, slowly spoon the solution over the top of the meat loaf. Put it into the oven for approximately 1 hour or until your meat thermometer reads 155 degrees internal temperature. Let it sit for 10 minutes before you start slicing it to avoid having it fall apart. Serve with hot macaroni and cheese and a side salad.
