Filled Fried Zucchini

This is another Southern food recipe from my sometimes-strange mind. I thought it up the other day, and I made it last night. I wasn’t sure how it was going to turn out, but it was very good. I hollwed out a small hole down the center of the zucchini and stuffed sticks of cheese into the hole.

Make sure the hole isn’t too big. I think if it was, the cheese would fall out in the frying process.

Holle’s Filled Fried Zucchini

What you’ll need:

medium-size fresh zucchini

mozzarella cheese sticks

beaten eggs

Italian bread crumbs

salt and pepper

oil for frying

Directions: Slice off ends of zucchini. Cut each zucchini in half, crosswise. With a small knife, make a “tunnel” in each section. Fill the hole with a cheese stick.

Slice zucchini into 1/3-1/2 inch sections.

Dip each section in eggs and roll in bread crumbs.

Fry in several inches of oil over medium heat until brown.

Drain on paper towels and sprinkle with salt and pepper.

Serve with marinara sauce, if desired.
