Great grilled grouper recipe!
Tonight for dinner we had some leftover corn-on-the-cob and sweet potato wedges that had been cooked on the barbecue. I had some grouper fillets and decided to grill them. I made a yummy salsa with a fresh mango and other ingredients. I used a Vidalia onion in my homemade salsa because that’s what I had in the kitchen. You might prefer to use a red onion. Also, I didn’t add cilantro to my salsa, largely because I’m not a big fan of cilantro. If you like it, add it!
Holle’s Grilled Grouper with Mango-Curry Salsa recipe
What you’ll need:
- 6 grouper fillets, ¾-inch thick
- Olive oil
- Black pepper
- 1 large mango
- ½ small onion
- ½ large tomato
- 2 tablespoons green bell pepper
- 2 tablespoons red bell pepper
- 2 tablespoons sugar
- 1 tablespoon cider vinegar
- 1 tablespoon honey
- 1 tablespoon lime juice
- 1 teaspoon curry powder
- 1 teaspoon ground red pepper
- Lawry’s garlic salt, to taste
- Cilantro (optional)
Directions: Rinse the grouper fillets and pat dry. Coat with olive oil and sprinkle with salt and pepper. Let come to room temperature for just a few minutes.
Make the salsa by combining remaining ingredients. Chop, dice, or mince the mango and the vegetables, depending on how chunky you want your salsa to be. Refrigerate salsa until the fish is cooked.
Grill grouper over medium coals until done. I like to use a grilling basket for this.
Remove grouper from grill and spoon plenty of salsa on the fillets.
