Grilled Sweet Potatoes with Butter-Rum Sauce

Recipes for southern food are often filled with locally grown ingredients, and sweet potato recipes are no exception. But have you ever tried sweet potatoes on the barbecue?

We were doing some BBQ cooking this evening and decided to grill some sweet potatoes. These are very tasty all by themselves, but I thought they might be even better with a sauce. I looked through the kitchen cabinets and found an almost empty bottle of rum. I thought it would be good with the grilled sweet potatoes, and it was!

Holle’s Grilled Sweet Potatoes with Butter-Rum Sauce

What you’ll need:

  • 4 large sweet potatoes
  • Corn oil
  • ½ cup butter
  • ½ cup brown sugar
  • Rum, to taste (spiced rum is best here)
  • Salt, to taste

Directions: Peel sweet potatoes. Cut each potato in half lengthwise, then cut each half lengthwise. You want to make 4 wedges from each sweet potato.

Place all the sweet potato wedges in a large bowl and coat with corn oil. Be sure each wedge is coated.

Grill sweet potato over medium coals for about 20 minutes, turning often.

To make the butter-rum sauce, combine butter, brown sugar, rum, and salt in a small saucepan. Bring to a boil and simmer until sugar dissolves and sauce thickens.

Serve sauce over sweet potatoes.
