Hubby loves banana bread, but banana bread recipes aren’t always the healthiest breads or snacks you can eat. Even so, the taste is hard to beat. With a few minor changes, however, you can use healthy banana bread recipes. These are lower in fat and lower in carbohydrates. You can even add some flaxseed meal for extra fiber and healthy omega-3 fats. You can do the same thing with walnuts in banana nut bread recipes.

Healthy Banana Bread Recipe #1
Ingredients
  • 1 ¼ cups self-rising flour
  • 2 teaspoons cinnamon
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 large egg whites
  • 2 cups mashed overripe bananas
  • ½ cup Splenda
  • ¼ cup sugar
  • ¼ cup applesauce
  • 2 tablespoons canola oil
  • 2 teaspoons vanilla
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray a loaf pan with Baker’s Joy cooking spray.
  3. Combine dry ingredients in a mixing bowl.
  4. Combine remaining ingredients in a separate mixing bowl.
  5. Gradually stir dry mixture into banana mixture. Don’t overmix.
  6. Bake for about 50-55 minutes.

Healthy Banana Bread Recipe #2 – Whole Wheat Banana-Rum Bread

Ingredients:

  • 1 stick butter, softened
  • ¾ cup Ideal Brown brown sugar substitute
  • 2 large eggs
  • 1 teaspoon rum flavoring
  • 1 teaspoon vanilla
  • 2 cups very ripe mashed bananas
  • 1 cup self-rising flour
  • 1 cup whole wheat flour
  • 1 teaspoon nutmeg
  • ½ teaspoon cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Directions: Preheat oven to 350. Grease or coat loaf pan with cooking spray. Beat together first five ingredients. Stir in bananas. Combine remaining ingredients and add to banana mixture, stirring just until moistened. Bake for about one hour.

 

Healthy Banana Nut Bread Recipe – Lower Carb Version

Ingredients:

  • 4 ripe bananas, mashed
  • 1/3 cup canola oil
  • 3 beaten eggs
  • 2 teaspoons vanilla
  • 1 cup self-rising flour
  • ½ cup soy flour
  • ½ cup flaxseed meal
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ½ cup Splenda
  • ½ cup Ideal Brown brown sugar substitute
  • 2/3 cup chopped walnuts

Directions: Preheat oven to 350 degrees. Spray standard loaf pan with Baker’s Joy. Combine bananas, oil, eggs, and vanilla in large bowl. In a separate bowl, combine flour, soy flour, flaxseed meal, baking powder, cinnamon, salt, Splenda, and brown sugar substitute. Slowly add dry ingredient mix to wet, stirring just enough to moisten. Add nuts and stir. Bake for 65-70 minutes.
