Holle’s Orange-Ginger Grilled Shark

What you’ll need:

  • 8 shark steaks or fillets, one inch thick and about 4 x 4 inches each
  • ½ cup orange juice
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons sugar
  • 1/3 cup oil
  • 1 teaspoon ground ginger
  • 1 tablespoon minced garlic
  • Salt and pepper, to taste

Directions: Dissolve sugar in orange juice and vinegar. Add remaining ingredients and stir.

Pound shark meat with a meat mallet to ½-inch thick. Place fillets or steaks in a large plastic zipper bag and cover with marinade. Refrigerate for two hours, turning occasionally.

Remove shark meat from the shark marinade and place over medium coals. Reserve grilling marinade. Cook the shark steaks or shark fillets about four inches from the coals for about four minutes per side. While grilling, brush with remaining marinade. Be careful not to overcook. The fish is done when the flesh is opaque and flakes easily.
