Low Carb Egg and Olive Salad
Eggs are great for low carb recipes. They’re naturally extremely low in carbs, and they’re high in protein. Egg dishes have a way of keeping you full and satisfied, so you’re not tempted to snack on high-carb foods. This egg salad recipe is a little different than my traditional recipe. Instead of chopped pickles, I use olives, which are also very low in carbohydrates.
Holle’s Egg and Olive Salad recipe
What you’ll need:
- 4 hard boiled eggs
- Small olives, whole or chopped
- 2 tablespoons real bacon bits
- 1 tablespoon diced red bell pepper
- 2 teaspoons Splenda
- Mayonnaise
- Salt and pepper, to taste
- 1 medium tomato, cut into wedges
Directions: Chop eggs in a medium-sized bowl. Add olives, bacon bits, red bell pepper, and Splenda. Mix with enough mayonnaise to hold mixture together. Season with salt and pepper. Spoon egg salad over tomato wedges.
