Low Carb Recipes: Blueberry Fluff

Sometimes when you’re on a low carb diet, you really crave something sweet. Of course, most desserts are loaded with sugar and carbs, so they’re usually off limits. This is a quick and easy low-carb dessert recipe that’s good and good for you. Blueberries are high in fiber, and they’re loaded with antioxidants. You’ll also get a good supply of calcium from the dairy products.

Holle’s Blueberry Fluff

What you’ll need:

  • 8 ounce block cream cheese
  • 1 cup sour cream
  • 1 ¼ cups Splenda
  • 1 teaspoon vanilla
  • 1 cup fresh blueberries

Directions: Place unwrapped cream cheese in a microwave-proof bowl. Soften for a few seconds in the microwave.

Add sour cream, Splenda, and vanilla, and stir until smooth.

Fold in blueberries. Cover and refrigerate for a couple of hours.
