low carb desserts
I just came up with more low carb recipes the other day, and one of them was for low-carb brownies. Are these as good as regular brownies? No, but they’re pretty darn good for low carb desserts! Of course, they don’t have the same texture as brownies made with wheat flour, but they’ve really helped when I wanted to snack on something sweet and cake-like. I’ll definitely make them again!
To be perfectly honest, I was busy while my low-carb brownies were baking, and I forgot about them and let them overcook. They didn’t burn, but they did dry out. I decided to try to remedy the problem by pouring Torani sugar-free chocolate syrup over them. This really helped! In fact, I plan to use the Torani syrups next time I make the brownies. Next time I might try Irish Cream, caramel, or peanut butter syrup.
A word about flaxseed meal or flaxseed flour: this stuff has been a huge help with my low carb diets! It has very few net carbs, along with lots of healthy fiber. It also contains Omega-3s. I use the flaxseed meal for low carb bread, low carb muffins, and other low carb recipes.
Holle’s Low Carb Brownies
What you’ll need:
- 2 cups flaxseed meal
- 2 ½ cups Splenda
- ½ cup soy flour
- 1 teaspoon salt
- 1 tablespoon baking powder
- ½ cup cocoa powder
- 4 eggs, beaten
- 2/3 cup Hood low carb chocolate milk
- 2 tablespoons oil
- 1 teaspoon vanilla
- 1 cup chopped pecans
- Torani sugar-free chocolate syrup (optional)
Directions: Preheat oven to 350 degrees. Spray a 9 x 13 pan with cooking spray. I used Baker’s Joy.
In a large bowl, mix together flaxseed meal, Splenda, soy flour, salt, baking powder, and cocoa.
Add the eggs, the chocolate milk, the oil and vanilla. Stir and let batter rest for 5 minutes. Add pecans.
Bake for about 40 minutes.
Remove from oven and mark into squares. Add Torani low-carb chocolate syrup now, if desired.
These low carb brownies will actually taste better the next day!
