Holle’s Low Carb Cauliflower Cheese Soup recipe
What you’ll need:
- 1 head fresh cauliflower OR 1 package frozen cauliflower
- 1 tablespoon butter
- 1/4 cup chopped onion
- ¼ cup finely diced red bell pepper
- 2 cans chicken broth
- ½ teaspoon garlic salt
- ½ teaspoon dried parsley
- ½ teaspoon black peppe
- 1 ½ cups heavy cream
- 2 cups finely grated cheddar cheese
- Water, as needed
Directions: Boil cauliflower in slightly salted water until very soft. Drain and set aside.
Melt butter in a sauce pan and sauté onion and bell pepper until tender.
Push cauliflower through a sieve or puree it in a blender.
Pour chicken broth in a large pot and heat over medium. Add cauliflower, onion, bell pepper, salt, parsley, and black pepper. Also, pour in melted butter from sauce pan.
Stir in cream, being careful not to burn.
Reduce heat and gradually add cheese while stirring. If soup is too thick, add a little water.
