Low carb recipes - quesadillas
Homemade quesadillas are yummy, and they’re quick and easy to make. You fill them with shredded cheese and add chicken, beef, shrimp, onions, pepper, mushrooms, or anything else you fancy. You’ll also need to sprinkle on some of your favorite seasonings, like garlic salt, chili powder, onion powder, and/or salsa.
The meat and cheese you add to quesadillas is, of course, no or low carb. The problem is the tortilla that forms the base of the quesadilla. Holle’s Low Carb Quesadillas recipe
What you’ll need:
- Low carb tortillas
- Shredded cheese
- Cooked meat, shrimp, chicken, etc.
- Cooking spray
Directions: Fill a low carb tortilla with cheese and seasoned meat. Place fillings on one side only. Fold tortilla over.
Heat quesadilla in a skillet that’s been sprayed with a non-stick cooking spray. Place folded, stuffed tortilla in pan on one notch above medium heat. Cook just until cheese begins to melt. Turn tortilla over to heat the other side.
Remove from pan and cut into three wedges. Serve with salsa, if desired.
