Low carb recipes are great for fish!
Tilapia is a lean, mild tasting fish that’s great in a variety of fish recipes. The following is one of my low carb recipes for frying. You don’t have to sacrifice taste and texture with healthy low carb diets! You’ll get lots of buttery crunchiness with this recipe, plus lots of healthy fiber and protein. Thinner fillets will work much better with this recipe than will thicker fillets.
Holle’s Pecan Crusted Tilapia
What you’ll need:
- 1 pound tilapia fillets
- Soy flour for dredging
- 3 beaten eggs
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2-2 ½ cups ground pecans
Directions: Rinse fillets and shake off water. Don’t pat dry. Shake in soy flour.
Dip each fillet in eggs and sprinkle with seasonings.
Roll fillets in ground pecans, pressing on fish, if necessary.
Place fish in single layer on a plate and freeze for about five minutes.
Remove fish from freezer and check coating. Roll in pecans again, if needed.
Melt 2 tablespoons butter in iron skillet, just above medium heat. Cook fillets, without crowding, until brown on each side. Add more butter to pan as needed. Drain fish fillets on wire rack.
