Yummy low carb recipes for traditional southern food? Wow, it just doesn’t get much better than this! This fried chicken is low carb because the recipe uses soy flour instead of regular flour. I also like to add some crushed pork rinds for more texture. Yes, southern recipes and low carb recipes can be one and the same!
Holle’s Low Carb Fried Chicken Recipe
What you’ll need:
- 1 cut-up fryer
- ½ cup whole buttermilk
- 2 eggs
- 2 cups soy flour
- 1 cup crushed pork rinds
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon poultry seasoning
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
Directions: Rinse chicken pieces and pat dry. Whisk together buttermilk and eggs in a medium bowl.
Combine soy flour, pork rind crumbs, salt, pepper, paprika, poultry seasoning, onion powder, and garlic pepper. Divide mixture between two medium-sized bowls.
Place the three bowls on the counter near the stove, with the egg and milk mixture in the center.
In a Dutch oven or large black skillet, pour about two inches of peanut oil and bring the oil to 350 degrees. Also, preheat oven to 350 degrees and grease a shallow baking pan.
Dip each piece of chicken in bowl #1, with the seasoned soy meal. Next, dip the chicken in bowl #2 – the egg wash. Next, dip the chicken in bowl #3, for the final coating of soy flour.
Fry the chicken parts until both sides have browned. Drain quickly on paper towels and transfer the fried chicken to the baking sheet. Bake for about thirty minutes.
