My aunt shared this recipe with me. She and my uncle lived in Alaska for several years while he was in the Air Force. Being born and reared in the South, they got to experiment with a lot of new foods. Some they liked, and some they didn’t, but they really loved roasted moose.
Moose Roast with Vegetables
What you’ll need:
- 5-6 pound moose rump roast
- Cooking oil
- Seasoned salt
- Black pepper
- Worcestershire sauce
- 2 large onions, quartered
- 4 large potatoes, cut in half
- 4 carrots, cut into 2-inch sections
- ½ cup grape juice
- 1 can beef broth
- Garlic salt
Directions: Remove fat from moose roast. Coat roast with oil and rub with seasoned salt and pepper. Place moose roast in a large roaster. Sprinkle roast with Worcestershire sauce.
Arrange onions, potatoes, and carrots around roast.
Cover all ingredients with juice and broth. Sprinkle with garlic salt.
Place lid on roaster and bake for 3-31/2 hours at 325 degrees until meat is done and veggies are tender.
