This is a quick and easy recipe for New England succotash, an old Native American dish. The original recipe often included bear fat and sometimes dog meat – or whatever else was available to the tribes at the time. Since the old recipe used dried beans, the process for making succotash took hours to prepare, but with my quick and easy recipe, you can enjoy the great taste of succotash in a snap! This is a wonderful accompaniment to just about any meat or poultry, and it makes a great addition to your Thanksgiving side dishes.
Holle’s Quick and Easy Succotash recipe
What you’ll need:
- 6 slices bacon, diced
- 1 medium yellow onion, chopped
- 1 can green lima beans, drained
- 1 can yellow whole kernel corn, drained
- 1 tablespoon butter
- 2 tablespoons heavy cream
- Salt and black pepper, to taste
Directions: sauté bacon and onion until soft. Drain off all but one tablespoon bacon fat.
Add lima beans, corn, and butter. When butter has melted, add cream and salt and pepper. Stir.
Cover pan and simmer for about 15 minutes.
