Oven Barbecued Ginger Thighs

BBQ cooking...indoors!

We enjoy BBQ cooking outdoors, but sometimes it’s just not feasible, so I do it indoors. I love barbecued chicken, and thighs are my favorite part of the bird. It doesn’t hurt that they usually pretty cheap, either. This chicken recipe has a sauce that’s sweet, tangy, and just a little hot. I made the sauce a couple of days in advance and left it covered in the fridge. You don’t have to make your sauce that far in advance, but I think it gives the flavors a chance to meld.

  • ¼ cup apple cider vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce

  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon ground ginger
  • ½ teaspoon powdered mustard

Directions: Rinse thighs and pat dry. Combine remaining ingredients in a bowl.

Dip each thigh in the sauce and place on a foil-lined baking sheet.

Bake for one hour at 400 degrees.
