Overnight Sausage and Eggs Casserole

This breakfast recipe is perfect for Christmas morning!

There are many different versions of this casserole. Oftentimes, it’s referred to as “Christmas morning breakfast casserole.” The reasoning behind this is that the casserole is put together the night before it’s cooked and served, so it can be baking while the family is busy with their holiday traditions. I must admit, I’ve served this dish on several Christmas mornings, so I suppose the moniker is appropriate.

Of course, my casserole is a little different than most of the other recipes you’ll find. My version has extra meat and no veggies!

Holle’s Overnight Breakfast Casserole recipe

What you’ll need:

  • 12 slices white bread, crusts removed
  • 3 tablespoons soft butter
  • 2 pounds spicy bulk sausage – cooked, drained, and crumbled
  • 6 eggs
  • 2 cups milk
  • ½ cup heavy cream
  • Salt, to taste
  • Black pepper, to taste
  • 2 cups sharp cheddar, grated

Directions: Butter bread and place in bottom of deep 9 x 13 baking dish.

Sprinkle sausage over bread.

Whisk together eggs, milk, cream, salt, and pepper. Pour over sausage and bread.

Top with cheese. Cover and refrigerate overnight.

Bake, uncovered, at 350 degrees for about 50 minutes.
