This is another easy party food that we serve often. It’s one of my daughter’s favorite party foods, and she makes it often just for her husband and kids. It’s so easy to make that you don’t need a special occasion! To make it fancier, however, you can roll the resulting ball in fresh parsley, chopped nuts, or paprika.
Holle’s Pineapple-Chicken Ball recipe
What you’ll need:
- 2 eight-ounce packages cream cheese
- 1 pack dry ranch dressing mix
- 1 small flat can crushed pineapple
- 1 large flat can (12.5 ounces) chicken breast, drained and shredded
Directions: In a microwave-proof mixing bowl, soften cream cheese. Add dressing mix.
Drain pineapple well, reserving juice.
Blend in chicken. Make sure all ingredients are thoroughly blended. If mixture is too stiff, add a very small amount of reserved juice.
Place ball in fridge to firm, then shape into a round ball. Roll in parsley, paprika, or nuts, if desired. Surround with crackers.
