Potato-Like Salad for Low Carb Diets

Okay, you know potatoes are generally a no-no on any low carb diets, right? So what are you supposed to eat with barbecue, smoked ham, and picnic foods when everyone else is chowing down on cool, creamy potato salad? For me, the answer is one of my low carb recipes – my version of low carb “potato salad,” which doesn’t contain any potatoes at all! Give it a try at your next barbecue or picnic.

I’ve found that even folks who aren’t concerned about carbs enjoy this salad!

Holle’s Low Carb Potato-Like Salad

Ingredients:

  • Package frozen cauliflower
  • Mayonnaise
  • Sour cream
  • 1 teaspoon spicy brown mustard
  • 1 tablespoon apple cider vinegar
  • Green onions, thinly sliced
  • 2 hard boiled eggs, chopped
  • Real bacon bits
  • Sugar-free sweet pickle relish
  • Splenda
  • Garlic salt
  • Black pepper
  • Paprika

Directions: Cook cauliflower until just fork tender. Drain well and squeeze with paper towels. When cauliflower is cool enough to handle, chop it into one-inch pieces or smaller. Place pieces in a large bowl.

Blend in equal parts of mayo and sour cream until mixture is creamy. Add remaining ingredients to suit your individual taste preferences. Sprinkle paprika on top and refrigerate salad.
