These muffins are great for any patriotic holiday, including Memorial Day, July 4, and Labor Day. Serve them for breakfast on the morning of the holiday to get everyone in the spirit, or offer them at your cookout or barbecue!
Holle’s Red, White, and Blueberry Muffins recipe
What you’ll need:
- 2 ½ cups plain flour
- 2 ½ teaspoons baking powder
- Dash salt
- 2 eggs, beaten
- 1 cup sugar
- 1 cup buttermilk
- ¼ cup melted butter
- ½ teaspoon vanilla
- 1 cup fresh blueberries
- ½ cup fresh cherries, chopped
Directions: Combine flour, baking powder, and salt in a large bowl.
Whisk together eggs, buttermilk, butter, and vanilla in a small bowl. Add to flour mixture.
Carefully stir in blueberries and cherries. Do not mix any more than you have to.
Line muffin tin with paper or foil liners.
Fill liners 2/3 full of batter and bake at 400 degrees for about 18 minutes.
