sauteed green beans, almonds, and peppers
All the ingredients used in this dish are great for low carb recipes. Of course, folks don’t have to be on low carb diets to enjoy these delicious green beans. They have a wonderful taste and texture. I really like the slightly sweet flavor provided by the red bell peppers, and you probably will, too!.
If you want to be fancy, you can call this recipe “green beans amandine.”
Holle’s Sauteed Green Beans with Almonds and Peppers
What you’ll need:
- 1 pound fresh green beans
- 2 tablespoons olive oil
- ¼ cup slivered almonds
- 1 red bell pepper, cut into small strips or diced
- Garlic salt, to taste
Directions: Remove ends from beans and slice or leave whole. Boil beans in salted water for six minutes. Immediately cool beans in ice water.
While the beans are blanching, toast the almonds in a non-stick skillet over medium heat for three minutes, stirring frequently. Remove almonds from pan.
Drain chilled beans and dry on paper towels. Heat olive oil in skillet over medium heat until hot. Add green beans and peppers and sauté to desired tenderness. Sprinkle with garlic salt and toss with toasted almonds.
