grilled fish recipes
As avid fishermen, hubby and I use a lot of fish recipes. The following is a great sea bass recipe I’ve used many times, and it’s always delicious. The flesh of sea bass is white and mild, and it perfectly adapts to numerous cooking methods and seasonings. I like sea bass cooked all different ways, but I’d have to say that my grilled sea bass recipe is probably my all-time favorite.
Holle’s Grilled Sea Bass recipe
What you’ll need:
2 black sea bass, 1-3 pounds each
1 bunch fresh parsley, divided
½ cup butter
¼ cup white wine
1 teaspoon white pepper
Directions: You can use sea bass fillets or whole sea bass for this recipe. If you’re using whole fish, remove the scales, the entrails, and the gills. Rinse fillets or fish and pat dry.
Coat fish with olive oil and sprinkle with salt and paprika. If using whole fish, place half the parsley inside the cavities. For fillets, chop the parsley and add it to the melted butter.
Cook fish over medium coals. Place whole fish directly on grill, and place fillets in a wire grilling basket.
Fish should be cooked for 5-8 minutes per side, depending on thickness. When the flesh is done, it will flake easily and be an opaque white.
Melt butter and add wine and white pepper. Drizzle over cooked fish.
