Skillet Tamale Pie

Great tamale pie recipe!

I just came up with this Southwestern recipe today! I had to taste it, of course, before posting it here, and I thought it was delicious. Can’t wait to try it out on the two grandkids who will be here soon! I cooked the whole tamale pie in my old black iron skillet, but you can use a casserole dish, if you prefer.

Holle’s Skillet Tamale Pie recipe

What you’ll need:

  • 1 pound lean ground beef
  • ½ cup chopped onions
  • ½ cup diced red bell pepper
  • ½ cup diced green bell pepper
  • Garlic salt, to taste
  • Chili powder, to taste
  • 1 cup frozen whole kernel corn, thawed
  • ½ – ¾ cups tomato sauce
  • 1 cup shredded cheese
  • 1 cup self-rising cornmeal
  • ¾ cup milk
  • 1 beaten egg
  • 1 tablespoon sugar
  • Salt and pepper, to taste

Directions: Brown beef in large iron skillet. When still pink, add onions and peppers. Drain off most – but not all- the liquid.

Stir in garlic salt, chili powder, corn, and tomato sauce. Sprinkle cheese on top.

In a bowl, mix together corn meal, milk, egg, sugar, and salt and pepper to form a thin batter. Pour over cheese in skillet.

Bake at 375 degrees for 35-40 minutes.
