Quick and easy chicken quesadillas
If you like quick and easy recipes, you’ll love this dish! This recipe is from my youngest daughter, Melissa. She and her family enjoy Southwestern recipes and Mexican food, so she prepares it several times a month. This chicken quesadilla recipe is a super quick and easy recipe that you can make in a snap because the chicken is already cooked. It needs a quick trip to the skillet to get warm and melt the cheese.
Melissa’s Chicken Quesadillas recipe
What you’ll need:
- 1 small can cooked chicken breast meat, well drained
- Garlic salt
- Lime juice
- Chili powder
- 2 tablespoons softened cream cheese
- Soft flour tortillas
- 1 can Ro-tell tomatoes with diced chilies, drained
- Shredded cheese
Directions: Mix together chicken, garlic salt, lime juice, chili powder, and cream cheese.
Spread on one side of tortillas.
Spoon on Ro-tell.
Sprinkle with cheese. Fold tortillas in half.
Melt butter in frying pan over medium-high heat. Brown on both sides. Cut into wedges. Top with salsa and serve with sour cream.
