Southwestern Recipes: Smoky Chicken-Bacon Ranch Quesadillas

Quick and easy ranch quesadillas

This is another gem from Melissa Crow, of Mystic, Georgia. Mel is the mother of three young children, and she’s also attending college online. Needless to say, she’s always trying to come up with quick and easy recipes. Like her mom (that’s me!), she loves good food, so anything she cooks is going to taste good.

Make this southwestern recipe from scratch, if you like, but you’ll save a lot of time and effort by using canned chicken and real bacon bits in a pouch.

Melissa’s Smoky Chicken-Bacon Ranch Quesadillas recipe

What you’ll need:

  • 1 large flat can cooked chicken, well drained
  • 1 envelope ranch dressing mix
  • 1 tablespoon lime juice
  • Few drops Liquid Smoke, to taste
  • 4 ounces soft cream cheese
  • Chipotle powder, to taste
  • Real bacon bits or pieces, to taste
  • Soft flour tortillas
  • Grated cheese
  • Olive oil
  • Ranch dressing
  • Salsa

Directions: Place drained chicken in a bowl and shred with a fork. Blend in ranch dressing mix, lime juice, Liquid Smoke, cream cheese, chipotle powder, and bacon bits.

Spread mixture on one side of tortillas. Sprinkle with cheese and fold tortillas over.

Drizzle oil in pan and heat on medium-high. Cook tortillas on both sides until cheese melts.

Remove quesadillas from pan and cut each into three triangles. Drizzle with ranch dressing and sprinkle more bacon bits on top. Serve with salsa.
