Spicy Glazed Carrots

One of my Thanksgiving recipes for carrots.

To be perfectly honest with you, I’m not a big fan of carrots, but I do enjoy this recipe from time to time. In fact, it’s my favorite way to eat cooked carrots. This about the only one of my Thanksgiving recipes that I’ll serve on turkey day. I suppose I like these carrots because they’re both sweet and spicy, and I really like the flavor of the apple juice in the glaze.

Holle’s Spicy Glazed Carrots

What you’ll need:

  • 2 pounds fresh carrots
  • 1/3 cup brown sugar
  • ¼ cup apple juice
  • 2 tablespoons melted butter
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground red pepper
  • ½ teaspoon cumin
  • Cinnamon sugar (optional)

Slice carrots into rounds.

Directions: Scrape and wash carrots and slice into rounds. Steam or boil sliced carrots until just fork tender. Drain carrots in a colander.

In the same pot, simmer brown sugar, apple juice, butter, salt, red pepper, and cumin until mixture begins to thicken. Return carrots to pot and stir. Cover and simmer until carrots are tender. Sprinkle with cinnamon sugar before serving, if desired.
