Stuffed Zucchini Boats
Among my southern food explorations some years ago, I began making zucchini boats. These are zucchinis that have been hollowed out and filled with a savory mixture. I’ve used a variety of stuffings, sometimes including ground sausage. The following is one of my favorites for the zucchini filling.
Holle’s Stuffed Zucchini Boats recipe
What you’ll need:
- 2 medium zucchinis, about 7 inches long each
- ½ cup Italian bread crumbs
- 2 heaping tablespoons mayonnaise
- 1 beaten egg
- ½ cup grated cheese
- ½ cup diced onions
- Salt, to taste
Directions: Wash zucchini and slice lengthwise. Cook in microwave until soft. Scoop out insides and place pulp in a mixing bowl. Chop pulp. Add remaining ingredients and stir.
Place shells on a foil-lined baking sheet that’s been sprayed with cooking spray. Fill zucchini shells with mixture and bake at 350 degrees for about 30 minutes.
