Do you like Tex-Mex recipes? The old man and I like just about any Tex Mex food. This is a pretty easy recipe that hubby and I especially like. As a matter of fact, it’s cooking right now as I type! The chicken turns out tender, juicy, and flavorful because it “steams” in lime juice first.
For the cheese topping, you can use taco cheese, Manchego, Colby, jack, or pepper jack. I really like Colby and jack with Tex-Mex recipes!
Holle’s Tex-Mex Skillet Chicken recipe
What you’ll need:
- 4 boneless, skinless chicken breasts
- ¼ cup lime juice
- Garlic powder
- Chipotle powder
- Olive oil
- 1 medium onion, cut into strips
- 2 heaping tablespoon jalapeno rings
- Shredded cheese
Directions: Place chicken breasts in a skillet with a lid. Pour in lime juice. Sprinkle breasts with garlic powder, salt, and chipotle powder.
Cover and cook on medium for 30 minutes.
Remove chicken from pan. Pour off liquid and wipe pan with a paper towel.
Drizzle pan with olive oil and heat to medium-high. Return chicken breasts to pan and add onions. Brown both sides of breasts.
Add jalapeno rings and reduce heat. Add cheese to tops of breast. Cover and simmer until cheese melts.
