These are the best pancakes you’ll ever eat…EVER! They’re light, fluffy, and melt in your mouth. I can’t take credit for this pancake recipe. I have more than one pancake recipe from scratch up my sleeve, but this isn’t one of my creations. I got this pancake recipe from a friend, and it’s almost 100 years old. Actually, the original recipe called these “griddle cakes,” but I wasn’t sure anyone outside the Deep South would know that term now, so I’m just calling them pancakes.

Wanna know what makes these pancakes melt in your mouth? It’s the beaten egg whites. That’s what makes this the best pancake recipe for all eternity! Okay, maybe that’s a little over the top…then again, you might not think so once you taste these! You might want a really big stack all to yourself. Feel free to double or triple the recipe, although you need to make each in a separate batch because of the beaten egg whites.

World’s Best Pancake Recipe                                                                                

What you’ll need:

  • 2 cups plain flour
  • ½ teaspoon salt
  • 3 ½ teaspoons baking powder
  • 1 ½ cups milk
  • 1 beaten egg
  • 2 tablespoons melted Crisco
  • 2 egg whites, stiffly beaten
  • 1 teaspoon vanilla

Directions: Sift together flour, salt, and baking powder. Stir in egg slowly. Add shortening and stir.

Beat egg whites and fold into batter. Add vanilla.

Drop by small ladle onto hot greased skillet and brown on both sides. Serve with butter, syrup, jam, jelly, and/or fresh fruit.
