You’ll need jumbo shrimp for this recipe. Peel and devein the shrimp first, then butterfly them. To do this, split the shrimp in half, almost to the tail. By the way, when you peel the shrimp, leave the tail and the last section of shell in place.
Holle’s Crab-Stuffed Shrimp recipe
What you’ll need:
- ½ pound crabmeat
- ½ cup Italian seasoned bread crumbs
- 3 tablespoons minced green onion
- 2 tablespoons mayonnaise
- 2 tablespoons melted butter, slightly cooled
- 1 beaten egg
- 1 teaspoon lemon juice
- Hot sauce, to taste
- 20 jumbo shrimp (more or less, depending on how much stuffing you add to each shrimp)
Pick through crab meat and discard bits of shell and cartilage. Flake crab meat and place in a bowl. Add remaining ingredients, except for shrimp.
Spray a foil-lined baking sheet with cooking spray. Place shrimp on tray and divide crabmeat mixture evenly among shrimp. Do this with the shrimp tail up and by slightly spreading out the two butterfly sections. Refer to the above picture. Dust with paprika, if desired.
Bake shrimp at 350 degrees for about 20-30 minutes.
