These pumpkin muffins could be included with your Halloween recipes or with your Thanksgiving recipes. I think the flavor is better if you use fresh pumpkin that you cook yourself, but canned pumpkin works almost as well. If you process your own pumpkin, be sure to use a small pie pumpkin.
Holle’s Pumpkin Muffins recipe
What you’ll need:
- 2 cups plain flour
- 3 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 1 egg, beaten
- ¼ cup melted butter
- 1 cup whole milk
- 2/3 cup cooked and mashed pumpkin
Combine dry ingredients in a large bowl.
Combine remaining ingredients in a separate bowl.
Add the ingredients of the smaller bowl to the larger bowl and stir just until blended.
Spoon muffin batter into greased and floured muffin tins or cupcake liners, filling each cup about 2/3 or ¾ full.
Bake at 400 degrees for about 20 minutes.
